Asian Salmon Salad


Love fish? Check out this tasty Asian Salmon Salad. This dish combines grilled salmon, mixed leaves, red capsicum, fresh avocado and cashew nuts, sprinkled with a zesty lime juice and sesame oil dressing. Within 30 minutes you've got yourself a quick and healthy evening meal crammed with texture and flavour. Plus, salmon is packed with Omega 3, vitamins, minerals and protein – what more could you ask for! 


Serves 2
  • 200g salmon fillet
  • 4 cups mixed lettuce leaves
  • 1 cup grated carrot 
  • 1 cup finely sliced red capsicum
  • 1/2 cashew nuts
  • 1 tbsp. sesame oil
  • ½ lime


  1. Grill salmon and flake through salad leaves. Add capsicum, carrot.
  2. Dress with sesame oil and lime juice.
