Detox Soup


How does a healthy detox soup sound? This recipe by HIF health expert Susie Burrell combines many healthy ingredients including finely chopped onions, leaks and celery with fresh tomatoes, carrots, pumpkin and steamed broccoli – yum!


  • 2 teaspoons olive oil
  • 1 medium onion, finely chopped
  • 1 leek, white part only, finely sliced and washed
  • 1/2 head of celery, chopped
  • 2 cups (500 ml) salt-reduced vegetable stock 
  • 3 cups (750 ml) water
  • 420g of chopped or tinned tomatoes
  • 1 medium carrot, peeled and cut into 1cm cubes
  • 500g pumpkin, peeled cut into 1cm cubes


  1. Steam 1 head of broccoli and cut into florets
  2. Gently heat the oil in a large saucepan.
  3. Add the onion, leek and celery and sauté over low heat until soft, for approximately 5 minutes. 
  4. Add the stock, water, tomatoes, carrot and pumpkin.
  5. Bring to the boil, then reduce the heat and simmer for 10 minutes. 
  6. Top with the steamed broccoli and serve.
