Spinach Pie


If you're in a rush for dinner this evening, why not try this delicious 'Spinach Pie' recipe by Susie Burrell. It's super easy to make and only takes 30 minutes. Team it with a healthy green salad and you've got a quick and nutritious evening meal. How great is that? 


Serves 4

  • 250g low fat ricotta
  • 200g reduced fat feta
  • 2 eggs
  • 2 spring onions, chopped
  • 2 bags of baby spinach
  • 180g of tin tuna in water, drained
  • 4 sheets filo pastry


  • Lightly cook spinach leaves in water in microwave and chop
  • Mix eggs, ricotta, tuna, feta and chopped onion
  • Spray baking tray with olive oil and fill with tuna and cheese mix 
  • Top with filo and bake for 30 minutes at 180C 
  • Cooked through until pastry is browned
  • Serve with large green salad
