Quick Vegetarian Chili Bowl


Does your day need spicing up? Why not try this ‘Vegetarian Chili Bowl’ recipe by HIF health expert Susie Burrell. The dish is easy to make, crammed full of vital nutrients and serves four people. 


Serves 4

  • 1 tbsp. olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 large zucchini, finely chopped
  • 1 green capsicum, finely sliced
  • 1 tbsp. chilli powder
  • 1 tsp. cumin
  • 1 420g can kidney beans
  • 1 420gn can crushed tomatoes
  • 1 420g can corn kernels
  • ¼ cup reduced fat sour cream


  1. In a large pot or saucepan, cook onions and garlic until clear with a little olive oil. 
  2. Add zucchini, capsicum, chilli and cumin until vegetables are tender.
  3. Add corn, beans, tomatoes and 1 cup water.
  4. Simmer until soft and serve with a little sour cream.
