King Prawn and Mango Salad with Thai Inspired Yoghurt


This 'King Prawn and Mango Salad with Thai Inspired Yoghurt' dish is the perfect option for a healthy and refreshing meal. Even better it serves four people. 


  • 20 king prawns, peeled and deveined
  • 300g reduced-fat yogurt
  • Rind of 1 lime, finely grated
  • 1 tbsp chopped coriander
  • 1 tsp fish sauce
  • 1 tsp brown sugar
  • 1/3 baby cos lettuce, washed and sliced
  • 1/2 continental cucumber, sliced with a peeler
  • 1 mango, peeled and sliced
  • 100g sugar snap peas, blanched
  • 10g coriander sprigs, extra
  • 1tbsp dry roasted unsalted peanuts, chopped


  1. Combine yoghurt, coriander, fish sauce, sugar and lime rind
  2. Stir well and refrigerate until required
  3. When ready to dine, cook the king prawns whichever way you prefer (e.g. grill, pan fry, barbecue)
  4. Assemble the salad ingredients on serving plates, top with prawns and drizzle with yogurt dressing
  5. Serve immediately.
