Rice Salad

  • ½ cup cooked brown rice
  • 50g lean chicken breast
  • 1 cup roasted diced pumpkin 
  • 5 walnuts 
  • ½ small red capsicum (pepper), finely chopped
  • 2 handfuls baby spinach leaves
  • 30g Danish feta, crumbled

Garlic Lemon Dressing

  • 1 tsp extra-virgin olive oil
  • 1 garlic clove
  • 2 teaspoons lemon juice


  1. In a bowl, mix together the rice salad ingredients. 
  2. Whisk together the garlic lemon dressing ingredients.
  3. Drizzle the dressing over the salad and serve.
