Quinoa Patties

Struggling for ideas when it comes to lunchtime or afternoon snacks? Why not try these delicious Quinoa Patties by HIF health expert Susie Burrell. The recipe is super quick to make and serves 3 - 4 people – the perfect healthy dish!

Serves 2-3

  • 2 ½ cups cooked quinoa
  • 4 large eggs, beaten
  • 2/3 cup fresh chives, chopped
  • 1 red onion, chopped finely
  • 1/3 cup fresh Parmesan cheese, grated
  • 6 cloves garlic, minced
  • 1 cup whole grain breadcrumbs
  • Extra virgin olive oil

  1. Combine quinoa and egg.
  2. Stir in garlic, chives, onion and cheese and add breadcrumbs.
  3. Form into 1 inch patties. The mixture should be very moist.
  4. Place a fry pan over medium heat. Heat olive oil. Cover and cook for 8 to 10 minutes.
  5. After 10 minutes (when patties are brown), flip and cook for another 7 minutes on the other side.

Serving suggestion: Light sour cream makes a great (and healthy) accompaniment.
