Seeded Beetroot Salad


Who loves beetroot? As well as being delicious, did you know that our favourite purple veg can also help reduce blood pressure and other associated risks such as heart attacks and strokes? In fact, according to, just three baby beetroots a day is equal to one of your recommended five portions of fruit and vegetables. With this in mind, we thought you may be interested in this delicious (and healthy) seeded beetroot salad recipe by HIF health expert Susie Burrell. It’s quick and easy to make, and serves two people


Serves 2 as a side

  • 1 bunch broccolini, cut into strips
  • 1/3 cup mixed seeds (sunflower, pumpkin, sesame)
  • 1 tablespoon light soy
  • 1 pack Baby Beets, cut into wedges
  • 1 tablespoon olive oil
  • ½ lemon


  1. Whisk olive oil and lemon juice.
  2. Steam broccolini. Add soy sauce to seed mix in a pan over medium heat for 2-3 minutes.
  3. Add beetroot to broccolini and dress with seeds and dressing. 
Optional: Add chicken for a light meal.
