Warm Lamb Salad

  • 400g lean lamb fillets
  • 1 tablespoon olive oil
  • Packet of assorted lettuce leaves
  • 1 Lebanese cucumber
  • 1 medium red capsicum, seeded and sliced
  • 4 Roma tomatoes
  • 100g reduced fat fetta
  • 200g pumpkin, diced and roasted


  • Chop all salad ingredients into bowl.
  • Finely slice lamb pieces and massage with olive oil. Sear lightly in very hot wok or fry pan until cooked rare-medium.
  • Add lamb to salad and dress salad with tzaziki yoghurt dip.
