Healthy Caesar Salad


All hail Caesar, king of salads! If you’re a fan of this classic crunchy delight, you’ll love our Caesar recipe (with a twist!). Provided by HIF health expert Susie Burrell, the dish includes Cos lettuce, cherry tomatoes, soft boiled eggs and shaved parmesan, drizzled with a quick and easy homemade dressing of avocado and Greek yoghurt. You can also throw in proteins like low fat bacon, grilled chicken and anchovies for extra texture. 

Did you also know... First created in San Diego in 1924, the original Caesar salad was not eaten with forks, but rather eaten with your fingers. The salad's creator, Caesar Cardini would arrange the lettuce on the plate so that the stems were facing out and he would put all the ingredients on each leaf. You’d then just pick up the leaf and eat it that way with your hands!  The salad provided to be so popular in years to come that the International Society of Epicures in Paris named Caesar’s salad “The greatest recipe to originate from the Americas in 50 years”. 


Serves 2

  • Baby cos lettuce
  • 50g low fat bacon
  • Punnet of cherry tomatoes
  • 2 soft boiled eggs
  • 100g grilled lean chicken breast
  • 1/2 cup shaved Paresan
  • 1 slice toasted Sourdough or Multigrain croutons


  • 1/2 mashed avocado
  • 2 tablespoons of natural greek yoghurt
  • lemon juice
  • Salt to taste

Alternative: Light Caesar dressing from supermarkets


  • Combine all ingredients with dressing or sliced sourdough on the side.
