Vegetable Salad With Cottage Cheese


Today's dish by Susie Burrell consists of fresh asparagus spears, carrot, zucchini and red capsicum drizzled with a refreshing lemon dressing combined with a serving with a cottage cheese.  The perfect option for a delicious AND healthy lunch! 


Serves 1

  • 4 asparagus spears
  • 1 carrot, sliced
  • 1 small zucchini, sliced lengthways
  • 1 small red capsicum, sliced
  • 10 snow peas
  • 1/4 cup of macadamia nuts
  • ½ cup cannellini beans
  • 3 tablespoons goats/cottage or feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon lemon juice


  • 4 oz of cooked chicken (diced)


  1. Mix oil, vinegar and lemon juice.
  2. Mix vegetables with nuts, chicken (if desired), lemon dressing and serve with goats, cottage or feta cheese.
