Nicoise Salad


Need inspiration for a light evening meal? Why not whip up this Nicoise Salad by HIF health expert Susie Burrell. This tasty recipe includes green beans, tuna, onions and cherry tomatoes drizzled with a zesty lemon juice.


  • ½ cup green beans
  • 100g tinned tuna in oil, drained
  • 1 green onion, sliced thinly
  • 5 cherry tomatoes, halved
  • 1 cup mixed lettuce
  • 1 boiled egg
  • ½ teaspoon finely grated lemon rind
  • 50ml (1/8 cup) lemon juice
  • 1 teaspoon wholegrain mustard
  • 1 cloves garlic, crushed
  • 1 teaspoon sugar


  1. Cook beans until tender.
  2. Combine beans with tuna, onions, tomato and lettuce in a large bowl.
  3. Whisk remaining ingredients in a small bowl; add to salad and toss gently to combine.
