Do you love a classic BLT? It’s certainly a firm favourite with the team here at HIF! If you need some inspiration for Sunday brunch today, why not try this delicious guilt-free option by HIF nutrition expert Susie Burrell. It combines crispy lettuce, crunchy tomato, a poached egg and low fat bacon with fresh wholemeal bread, drizzled with a teaspoon of light mayonnaise or sweet chilli sauce – yum!

Ingredients

Serves 1

  • 1 Wholemeal / Mission Valley Multigrain Wrap Bread
  • Canola oil spray
  • 1 egg
  • 2 slices tomato
  • 2 pieces of your favourite type of lettuce i.e. rocket, iceberg, cos
  • 1 slice 97%fat free bacon
  • 1 teaspoons of light mayonnaise mixed with 1 teaspoon of sweet chilli sauce or relish

Method

  1. Poach egg
  2. Using canola oil spray, lightly sear bacon.
  3. Add egg, bacon, tomato, lettuce to wrap bread, drizzle with low fat mayonnaise, wrap and serve.
