Avocado and Prawn Salad with Lime and Passionfruit Dressing


Need inspiration for dinner this evening? Why not try this delicious “Avocado & Prawn Salad" recipe by HIF health expert Susie Burrell. This mouthwatering dish combines prawns, avocado, celery and mixed leaves, topped off with a zingy homemade lime and passionfruit dressing!


Serves 2

  • 4 cups mixed leaves
  • ½ avocado, cubed
  • 200g cooked peeled prawns
  • 1 celery stick, finely chopped
  • Handful of snowpeas (optional)

Lime and Passion fruit dressing

  1. 1 tablespoon olive or flaxseed oil
  2. 1 teaspoon walnut oil
  3. Juice of ½ lime
  4. Juice and seeds of 1 passion fruit
  5. ½ small red chilli, deseeded and finely chopped (optional)


  1. First make the dressing. Blend the olive or flaxseed oil, walnut oil, lime juice, passionfruit juice and seeds and chilli with salt and pepper until smooth and adjust the seasoning as necessary.
  2. Arrange the mixed leaves on a plate.
  3. Gently combine the avocado, snowpeas, prawns and celery with the dressing, pile on to the leaves and then serve.
