Crumbed Lamb Cutlets With Honeyed Carrots


If you're a lover of lamb, then this week's 'Cheesy Crumbed Lamb Cutlets with Honeyed Carrots' recipe is the perfect option for you! 


Serves 4 people

  • 1 ½ cups fresh breadcrumbs
  • 3 tablespoons chopped parsley
  • ½ cup grated cheddar cheese (low fat )
  • 12 lamb cutlets, trimmed
  • 1 egg, lightly beaten
  • 1 tablespoon olive oil
  • Honeyed carrots
  • 10g butter (approx 1 teaspoon)
  • 1 tablespoon honey
  • 12 baby carrots, trimmed and blanched


  1. In a bowl combine the breadcrumbs, parsley and cheese. 
  2. Dip the lamb cutlets into the egg and then press each side into the breadcrumb mixture.
  3. Place on a tray lined with non-stick baking paper and refrigerate for 20 minutes.
  4. Heat the oil in a large non stick frying pan over medium heat.
  5. Cook the lamb cutlets in two batches for 2 minutes each side or until the crust is golden and the meat is cooked to your liking.
  6. To make the honeyed carrots, heat a medium non-stick frying pan over high heat.
  7. Add the butter and honey and cook for 1 minute or until the butter has melted.
  8. Add the carrots and cook, turning for 2-3 minutes or until the carrots are tender.
  9. Serve with the cutlets and salad.
