Chicken and Three Bean Soup


Now that winter is here and the days are getting colder, it’s only natural that our cravings for warm and nutritious food will increase. So if you need inspiration for a tasty home cooked meal, why not whip up this hearty chicken and three bean soup by HIF health expert Susie Burrell. The recipe includes chicken breast, three types of bean (kidney, cannellini, white beans), spinach and more. Yum!


  • 1 tablespoon olive oil
  • ½ Spanish onion, diced
  • 1kg chicken breast, cubed
  • Packet of frozen spinach
  • 1 can red kidney beans
  • 1 can cannellini beans
  • 1 can white beans
  • 1 tetra pack salt reduced chicken stock


  1. Heat olive oil and onion over medium heat in a large soup pot.
  2. Add chicken, heat through then add stock and bring to boil. 
  3. Add spinach and simmer until cook through.
  4. Add beans and cook through.
  5. Season and add water to taste.
