Winter Vegetable Chilli


This recipe was sent in by HIF member Leanne from Morphett Vale in South Australia. Leanne says "This warming dish gives you all the five daily fruit and veg portions. It is a favourite in my household and any leftovers can be put in the freezer." Thanks Leanne!


  • 1 onion, chopped
  • 1 carrot, diced
  • 1 capsicum, diced
  • 1 zucchini, diced
  • 2 teaspoons of mild chilli powder
  • 100g can of sweetcorn, drained
  • 410g can of kidney beans, drained
  • 400g can chopped tomatoes
  • 1 veggie stock cube


  • Heat some vegetable oil in a large saucepan and fry the onion, carrot, zucchini and chilli powder for 3-4 minutes.
  • Add the remaining ingredients and bring to the boil. 
  • Simmer gently for 10 minutes.
  • Serve with freshly cooked long grain rice or some sourdough bread. Enjoy!
