Kale and Sausage Casserole

This week Susie combines two Portuguese favorites, Kale and Sausage, and creates a simple, yet delicious casserole. This dish is the perfect option for a warm, wholesome evening meal!

Ingredients

  • 2 tsp. olive oil
  • 1 500g pack of Peppercorn Lean Chicken Sausages
  • 2 cloves garlic, finely chopped
  • 1 420g can cannellini beans
  • 2 cups salt free chicken stock
  • 1 420g can diced tomatoes
  • 1 bunch kale, finely chopped

Method

  1. Heat oil over medium heat and add sausages.
  2. Add garlic and cook for a further 2 minutes.
  3. Add beans, stock and tomatoes and bring to the bottle. 
  4. Add kale and cook for a further 2 minutes and serve.
