Stuffed Capsicum


Need ideas for a post workout snack? Why not try this ‘Stuffed Capsicum’ dish by HIF health expert Susie Burrell. Combining extra lean mince, capsicums, onion, garlic, zucchini, mushrooms, carrot and tinned tomatoes, this recipe is the perfect option for a high protein, low carb meal. 


  • 4 large red capsicums, top cut off and deseeded
  • 2 tsp. olive oil
  • 1 onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 500g extra lean mince 
  • 100g container salt reduced tomato paste
  • 1 zucchini, finely diced
  • 2 celery stalks, finely diced
  • 1 cup button mushrooms, finely chopped
  • 1 carrot, finely diced
  • 420g can of tinned tomatoes
  • ½ cup reduced fat grated cheese


  1. Cook onions, garlic with olive oil.
  2. Add mince until brown. Add tomatoes, paste and vegetables and simmer for 20-30 minutes. 
  3. Heat oven to 160ºC.
  4. Place cooked mince in capsicums, top with grated cheese and cook for 10-15 minutes until heated through and cheese melted.
  5. Serve with salad.
