An easy little party appetizer that takes hardly any effort to make but looks pretty cute! Just chop Greek salad bits, scatter them over a feta and yogurt spread on a tortilla, roll up the tortilla, and chop into rounds. Delicious!

However, our very own mental health blogger, Dr Happy suggests "DON'T aim to have a great year...because a whole year of greatness, happiness and success is just not possible! Instead I suggest aiming for happy moments. At the end of the day (or week or year) it's likely a few things would have gone wrong. But it’s also extremely likely that some things, possibly many things, "went right"!" In his latest article for HIF, Dr. Happy shares his top tips on to look at your day.

These Greek potatoes by HIF foodie Helen from Scrummy Lane truly deserve to have the words 'the best' in their title. They're tasty, creamy, and crispy all at the same time, and go with anything. According to Helen, "They take about an hour and a half to cook, but they are EASY. Simply cut potatoes into thick wedges, tip into a baking dish and pour over stock, olive oil, lemon juice and oregano. Bake for 45 minutes, stir well, then bake for another 45 minutes - simple." Enjoy

Why you need NOTHING more for happiness...

Running errands. Doing the school run. Making dinner. Going to work. Getting some exercise. We live stressful and busy lives, whether we notice it or not. We are always juggling schedules, commitments and even when we think we’re relaxing, we’re usually thinking about something we have to do. We never really take the time to recharge out batteries, clear our heads and gain a fresh perspective on our day-to-day lives. But according to our mental health professional, Dr. Happy, it actually doesn’t take much at all to reboost our mental health, simply doing "nothing at all" is sometimes all we need.
